As "normal" sets back in, the world has had the chance to slow down a bit, to reconnect with reading, music, evening walks, and a pace that we likely haven't experienced since childhood.

While the world emerges from sheltering in place, Belize is joining in the resurgence. With domestic travel already open, we are on the edge of our seats waiting for our international guests to return.

In the next few months, we look forward to new ways to keep our guests safe, healthy, and enjoying the island's peace, as they have for the last forty years.

1. Know that there is a value in stepping away from your day to day routine. Take a breath, give yourself some space, and gain perspective on everything you've gone through. This is why vacations are so awesome, near, or far!! (Yes, St.George's and Belize, we are waiting patiently to sink our toes in the sand and play in the ocean!)
2. Take inventory and recognize where you are at today. What has changed? Are there parts that no longer fit? What about the pieces of your life that you missed? Bring awareness to what is going on in your new reality today. It may even help to make a list of:
   1. What works, what has helped me cope and thrive?
   2. What no longer works, this can be surprising sometimes, what don't I need any more?
3. Making this list does not hold you to anything. You're simply acknowledging how things have changed or not. Information!
4. Now that you've taken inventory. Is there anything that has brought more joy and happiness? Less stress, more time? Take some time to look through your lists.
5. Pick one or two that you can focus on. That is your GOAL. Write it down. Make it a priority!
6. Find ways to incorporate these new pieces of your life while moving forward with the new normal. Along the way, make adjustments and tweaks to how the new pieces are fitting into your life.

Through all of this process, know that making changes and integrating them into your life takes energy. Keeping your written goal somewhere you see it daily will keep you focused on the process, always making a note of what works or doesn't.

Finally, remember to make relaxation and replenishment a part of your new plan. Remember the part of the change, even good change, that taxes our body and mind? Like a race car, we too need maintenance to keep healthy! Whatever it is that brings playful joy into your life - sunshine, exercise, meditation, time in nature, a favorite hobby - make it part of your daily routine!

Putting all the new pieces together will take some time and can be exciting, challenging, and uncomfortable. However, you choose to bring this new information into your life, make sure to keep your mind and body healthy by practicing daily self-care. When the time comes for us to travel away from our current communities, we will be ready to navigate step 1 once again! We will really be able to enjoy our vacation and gain further clarity on our lives, how we are living, and most importantly, have the energy and health to make those changes!

Let's face it, during this time of separation, it is only natural to want to come together and be social. What we wouldn't give for a dinner with friends, a birthday party with joy and cake, or a wedding dance, celebrating in our loved ones' union. We look forward to the future, and from that, we come to our second "Bucket List Belize" to-do -- your group getaway to the island!

Good morning! The temperature is about 76 degrees Fahrenheit, and tropically perfect. You have awakened to the sea breeze coming through your window, you open your cabana or villa door to find that our friendly staff has delivered fresh coffee, tea, and juice to your door. Fry Jack

Fry jacks are one of the most popular foods in Belize. They are small triangles of dough that are fried until golden brown and served warm. Normally eaten for breakfast and served alongside refried beans, sausage, eggs, etc.. A drizzle of honey on top turns a savory fry jack into a decadent delight!

Rice and Beans

Rice and beans is the Belizean national dish composed of a base of red kidney beans and rice and cooked in coconut milk. Typically served with stewed chicken, but any meat will do! It is traditionally served with a Belizean style potato salad. 

Stew Chicken or Pork

Belizean comfort food at its finest! Chicken or pork is rubbed in Red Recardo or achiote paste and slow-cooked in broth. Served over rice and beans for lunch or dinner. This dish will leave you feeling full and happy! Click here for a recipe!

Tamales (Bollo)

Belizeans put their own twist on the traditional Mexican tamale by wrapping them with plantain leaves instead of corn husks. Seasoned meat (chicken or pork) is wrapped in a soft corn dough and then steamed in plantain leaves. They can also be vegetarian by substituting the meat with vegetables. Conch Fritters

Fresh sea food is abundant in Belize, and a crowd favorite is conch. Conch fritters are a popular appetizer, and are made from a batter of Conch, sweet peppers, onions, celery, flour, and seasonings and then deep fried to perfection! Yum!

Whether breakfast, lunch or dinner is your favorite, you will be sure to find a new and robust palate of flavors to excite the senses. We welcome you to our table. Be our guest! 

The island is host to thousands of seashells. All originating from different places, all arriving in their time, all moving on the ebb and flow of the sea. A seemingly appropriate metaphor for the current state of things; quite the ebb and flow... 

This time may leave you feeling like your 'normal' has been a bit re-defined. We can empathize. Although we are ecstatic with the large number of people that are booking for this fall and even summer, we are reflective of the people we should have been of service to, interim. We are keeping spirits up, the sun on, and eagerly awaiting the day that we welcome our next guests with a rum punch, and a warm, island smile.

During this "downtime" It is a perfect time to reflect on how to come back better. We have heard that many people are using the extra time on their hands to get back to the simple things, enjoy a walk outside, a good movie, or just a simple cup of coffee while video chatting with a friend. We are also working on our return! We have been discussing ways to serve our guests to an even higher standard and intentionally enhance some offerings to give you more options for reflection and rejuvenation at the island.

To that end, about a month ago, our US team had the honor of meeting with Kelli Soll, the founder and director of Global Service Partnerships (GSP), which offers unique and life-changing service and travel programs in Belize, Central America. Shortly after that meeting, we also met Kelli's business partner, Marni Henderson, founder of Coalesce Discovery and a wellness practitioner. Their collaboration, Horizons Retreats, is a magical Belizean retreat experience! Together we started the planning process of a retreat offering this coming October. Our team was so moved by our meeting and their mission, that it just seemed like a natural fit.

"Each of us will have a new normal as we emerge from this unprecedented time in history," stated Kelli in a recent chat, "It is up to every one of us to take this time to evaluate what is truly important in our own unique lives, how we live our values in the future, and to mindfully pursue a daily life with more presence."

"This is a moment of reflection." Marni added, "...to take a pause and bring awareness to the information revealed from this experience. It will be imperative to give ourselves time to heal, relax and replenish our stressed-out bodies, hearts and minds. I can't think of a more magical place to do that..."

Imagine dipping into the Caribbean Sea and exploring the Barrier Reef just off the coast of Belize. You'll come across many beautiful and colorful fish, coral, sea turtles, and you may even swim alongside a manatee or dolphin. One species of fish you are sure to encounter is the Lionfish. Lionfish are beautiful (and tasty!), but are also an invasive species to the Caribbean with no known predators, and a danger to the health of the coral reef ecosystem. 

Since it's impossible to eliminate the lion fish, our goal is to manage the population by spearfishing, netting, and line fishing them and enjoying the delicious white meat at mealtime.

To do our part to help control the population around Belize, our dive professionals often take spear guns out with them. Experienced divers can take advantage of this unique and fun opportunity to hunt lionfish and help the reef alongside our dive professionals! This specialty dive is offered as a local two tank dive or a one tank dive at the reef. No matter which you choose, the thrill and excitement of the hunt will be a memory you'll carry with you long after you've left the island. 

With a little luck, you might bring back enough lion fish for the chef to prepare appetizers for everyone! Yes, although they have venomous fins, lion fish are a delicate and delicious white meat. There are many tasty ways to prepare lionfish, such as ceviche, lionfish fingers, whole fried lionfish, lionfish fillet and lionfish fishcakes.

"We caught 16 lionfish between three of us with Hawaiian slingshots when we were diving and shared that with the group. They grilled them up and it was one of the best things there to eat."

Most of the rain forest mammals of Belize are nocturnal and secluded in their nature. This makes them extremely difficult to find. Animals of prey are alert for approaching predators, so they will likely sense you before you are able to see them. That is why the Belize Zoo is such a unique and a must-do destination.

Snorkel over our Bountiful Coral Reef System

The Belize Barrier Reef is part of the Mesoamerican Barrier Reef, the second largest coral reef system in the world, and home to an incredibly diverse ecosystem of plants and sea life. Explore Lamanai Ancient Maya Temple and Maya Ruins

The name "Lamanai" comes from the word "submerged crocodile" in the Mayan language. This site, situated along the New River Lagoon, features monumental architecture of temples and palaces dating from the Classic and Pre-Classic Periods.

The ruin's core site includes more than 100 minor structures, including a ball court, at least 12 major buildings, and three temples. These temples are:

• The Jaguar Temple
• The High Temple

Each week guest come and go. Each of them having a different set of goals for their stay with us. Most are surprised at how much there is to do, right here on the island. We wanted to feature all of the complimentary activities there are right here at the caye. We hope you can read through this and enjoy the beautiful scenery while dreaming of setting sail or taking a dip in the sea. 

Kayak: Take off right from our swimming beach and easily paddle the leeward side of the caye over to the mangroves and the ultra-calm canals that separate section of the island. Search out the great herons, frigate birds and white egrets – maybe even spot some nests. Or get adventurous and paddle out toward the reef, stopping for a dip in the warm water. (Single and tandem kayaks available.) 

Sail the Caribbean: We maintain three Hobie Cat sailboats for your pleasure. Experienced sailors enjoy visiting the sandbar nearby, even taking lunch (and a few beers) for the journey. The larger boat will accommodate four people, so you can go with friends, or make new friends. It's easy to learn to sail these boats, so just ask if you would like to try it – our captains will be happy to "teach you the ropes" (no charge) and you will be sailing in no time!

Stand-Up Paddle Boards (SUP): Try this fun and popular new sport in the calm waters on the lagoon side of the island, a great way to check out the wildlife both above and below the water. We recently added stand-up paddle boards to our water sports equipment after guest requests - and what fun it has been! Paddle boards are a great workout too.

Snorkeling: Snorkeling right off the beach is fun and free, including complimentary use of our gear. There are always fish to find around the docks and you can stay close to shore. But for the ultimate snorkeling experience, you can schedule a half-day trip with our professional guides over the coral reef system just minutes from St. George's. You will find sea life on your own, and our guides will point out varieties of reef fish, rays, eels, conch, and possibly manatees. This is great fun with a group, or just for two! Snorkelers can also sign up to join a full-day guided trip to the Blue Hole and Lighthouse Reef. This is a diver's mecca, but is also a tropical dream trip for snorkelers.

Windsurfer's Heaven: Located at the far western end of the Caribbean Sea, we are blessed most every day with excellent breezes (trade winds) blowing across the reef, providing ideal crosswind for exciting windsurfing. We have been told by guests who travel the world in search of "the best wind" that the shallow waters between St. George's Caye and our coral reef provide the ideal conditions for windsurfing – come experience it for yourself! Just like the sailing, if you want to try windsurfing, our captains will be happy to set you up and get you on your way. After a few trials and maybe a few refreshing dips in the ocean, you will be riding the waves!

​Swimming in Paradise:​ Guests at St. George's Caye Resort enjoy three excellent swimming options. Our sparkling pool is maintained with the perfect water balance to be ready when you are – 24/7. The water is slightly saline which means it stays clean and requires much less chlorine than traditional pools. Swim laps, start a water polo match, or just cool off in the tropical sun. Our lagoon facing swimming beach allows you to walk right into the sea from your lounge chair. You can swim out into the protected bay of our crescent-shaped island, or paddle around the docks looking for sea life.

Dolphins frequent this side of the island an you may even meet a Manatee. Take our complimentary snorkel gear and you will be sure to view juvenile reef fish. Our sands are comprised of finely broken coral making for a solid surface of beautiful white.On our dock on the windward side of the caye you will find chairs, chaise lounges and hammocks under a thatch-roof palapa and out in the sun.

Flats

Did you know the shallow waters of Belize contain the only classic tarpon flats outside of Florida? Saltwater Flat Fishing is popular among those who want to catch the "Big Three" of permit, tarpon, and bonefish. Experienced anglers prefer to use fly gear while flat fishing, while beginners will typically use spin gears. No matter your experience, this is an exciting fishing adventure for one and all- especially in the summer months that are also known as Grand Slam Season- where you have the best chance of catching the big three in one trip!

River

The Old Belize River is our location of choice when it comes to river fishing and is located about 30 minutes from the resort. You'll actually pass it as you travel from the airport to the island, so be on the lookout for a sneak peek on your way in! This river empties into the Caribbean Sea, which means the water here is unique as it is a mix of fresh and salt water, also known as "brackish water". In this type of water we target snooks, jacks, tarpon (catch and release) and snappers. If you're lucky, you may even land yourself a grouper or spot a manatee! 

Reef

Take a short boat ride south of the resort with our experienced guides and experience fishing on the Belize Barrier Reef- the 2^nd largest in the world and home to over 500 species of fish! Snappers, barracuda, mackerels, groupers, and jacks are among the many fish you may catch during your time on the reef. Check out this exciting fishing experience a recent guest shared with us! 

"My wife and I went on a half day fishing trip, it was guided by a local fisherman and he put us on some Barracuda! We caught 9, it was my wife's first time salt water fishing. She caught the largest one (3.5 - 4 ft, 20 - 25 lbs). The staff cooked our fish for all the guests to enjoy as part of the evening meal, mouthwatering!! We will be returning to this resort as soon as we can!"

Fish
 

Tarpon

Our flats are renowned for the opportunity to site cast to tarpon 12 months of the year. Tarpon numbers begin to increase in April and May and drop off in September or October, with the peak months being June, July, and August. Some resident tarpon stay throughout the year. Moon phases tend to effect tarpon more than other fish so the guideline is to fish around the new moon. But remember, this is only a guideline and plenty of guets catch tarpon at other times too.

Belize Permit

Permit are found on what is called "the bonefish flats" and on many of the tarpon flats as well. They are found in large schools and range from four to thirty pounds, with the majority in the range of eight to ten pounds. Permit fishing tends to be more predictable when the prevailing winds are most consistent - generally in the winter, spring, and summer.

Bonefish

The bonefish in the waters of Belize run from two to five pounds and are plentiful year-round. Most fly fishing for bonefish is done from the bow of the boat, but there are flats that may be waded as well.

Did you know Belize is a favorite Central American birding spot? Because of our ideal climate, as many as 600 different species of birds have been recorded throughout the country! Around 80% of the birds in Belize are here year-round, while the other 20% migrate from North America between January and April to escape the harsh winter, or South America during the Belizean summer months.

While you can spot birds all over the mainland and cayes, the Belize Audubon Society has identified seven Important Birding Areas (IBAs). Portions of these areas are located within protected areas.

In keeping with our commitment to provide you with a quiet, tranquil environment, we welcome guests 15 years and older (13 and up for divers). If you rent the entire resort for a family reunion or group, you are welcome to include children.

Where can we buy souvenirs?
We have a small gift shop in the main lodge featuring useful items and handicrafts made by native Belizeans who live in the villages our staff members come from. There are many items available at the Belize airport as well. We also offer an all-day excursion, the San Pedro Slam, during which you can do some shopping and experience the multitude of beach bars, restaurants and galleries.

 Are there TVs in the rooms or lodge?
Most guests come to our island paradise to relax and unwind so we do not have televisions anywhere at the resort. We do offer complimentary WiFi service in the main lodge and outdoor dining area so you can stay in touch with friends and family.

You get unlimited use of our kayaks, windsurfing boards, Hobie Cat sail boats, and snorkeling gear (for snorkeling off the beach/docks).  Do we need to pre-reserve diving or excursions?

You can arrange your activities and excursions with our staff after you arrive. We do schedule 48 hours ahead so it is best to let us know before you arrive if there is something you want to do on your first full day. (We offer packages that include the most popular activities and excursions.)
The one exception is guided fishing because we need to ensure the availability of a professional guide for you. Fishing should always be pre-reserved.

Can I get my open water diving certification at the resort?
We have several incredible dive masters and instructors on staff to assist you, whether you're a long-time diver or wanting to get certified for the first time. We offer a variety of SCUBA diving training and certification courses. If you're planning to get certified, we recommend you do the classroom reading and studying ahead of time so you can maximize your time in the water while staying with us.

 Are my meals included at St. George's?

Yes. Since we are the only business on the island, we provide a meal plan for all guests. Learn more about Dining with us. (Meals are included with all of our packages.)

Are all drinks included?

There is really no "bad" time to travel to Belize. Each season comes with its own added perks. From prime time Grand Slam Fishing season,  to September Celebrations. Not to mention, Easter and other holidays like ringing in the New Year! No matter when you travel, we do have some key tips on how to avoid crowds during your trip. 

​Schedule in some down time

Belize offers many opportunities for adventure, but be sure to plan a couple days to simply relax. Building in some unstructured time will allow you to recharge and avoid feeling like you need a "vacation from your vacation". Here at the resort, hammock time is an approved and well-loved activity!

Choose a remote island destination ;)

We may be a little biased on this concept. While there are many places to stay on the mainland, choosing a resort that is tucked away from the crowded tourist destinations is the perfect choice! At St. George's Caye, we're conveniently located only 7 miles away from Belize City, making it easily accessible from the mainland yet worlds away! We host a maximum of 35-40 guests at a time, so you can rest easy knowing the island will never feel crowded.

Go off the beaten path

While Belize city is not really set up for tourists so we always want to be your guide, we know the best places for the perfect excursion for your ultimate rest and relaxation. Some excursions, such as San Pedro Slam or our Belize Cultural Adventure, will take you to areas of Belize that tend to be very popular. For a quieter and less social adventure, try snorkel, diving or for cultural fun, the Lamanai Maya Ruins or St. Herman's Cave.
